burrito Simple Spanish Burritos -This simple Spanish burrito recipe is great for breakfast or lunch, and is a “Quick Fix”. Pan fried eggs and chopped sausage, mixed with homestyle hashbrown potatoes, all wrapped in a tasty tortilla. Top with warmed salsa, and serve as is for breakfast, or with a simple rice dish for lunch. A quick, easy, anytime recipe, that can even be made ahead.

Ingredients to make Simple Spanish Burritos

10 oz Frozen hash brown potatoes, country style
3 tb Vegetable oil
Salt and pepper
8 oz Bulk light sausage
4 Eggs; beaten OR 1 c -Egg substitute
4 Flour tortillas, 7-8 inch, warmed
1/2 c Prepared tomato salsa

Directions to make Simple Spanish Burritos

Step 1:In large nonstick skillet cook hash browns in oil as package directs. Season with salt and pepper. In medium skillet over medium heat break up and cook sausage until thoroughly cooked, 5 to 7 minutes; drain fat. Add eggs to skillet; cook and stir until eggs are set.
Step 2:To serve, spoon hash browns and sausage mixture down center of each tortilla, dividing equally. Fold sides over and secure with picks. Serve with salsa.
