Ingredients to make Greek Vegetable Casserole

1 Eggplant
2 lb Zucchini
4 md Potatoes
2 Green peppers
1 Red pepper
2 md Onions
1 c Olive oil
4 md Tomatoes
2 Garlic cloves
1 ts Sugar
Feta Cheese

Directions to make Greek Vegetable Casserole

Step 1:Prepare the vegetables: Cut the eggplant, zucchini and potatoes in bite sized chunks (do not peel the zucchini or the eggplant). Remove the stems and seeds from the peppers and slice them into strips. Peel and slice the onions. Dice the tomatoes
Step 2:Saute the vegetables except the tomatoes in the olive oil in small batches. Saute each batch for 2 or 3 minutes, then remove from the pan, trying to drain some of the oil so that enough oil is left for the next batch. When you’re done, most (if not all) of the oil should be gone from the pan.
Step 3:Place the sauted vegetables in a baking dish and toss them briefly so that you won’t get only one kind of vegetable in one place. the tomatoes into the pan and saute for a couple of minutes. Crush the garlic and add to the tomatoes. Add the sugar, salt and pepper to taste and simmer for another minute.
Step 4:Pour the tomato sauce on top of the vegetables and bake at 350 deg. F for 60 minutes or until the vegetables are tender. Sprinkle with feta cheese before serving.

Ingredients to make Greek-Style Lamb Burgers with Minted Yogurt Sauce

For yogurt sauce:
12 Ounces plain yogurt
2 Small garlic cloves
1/4 Teaspoon salt
3 Tablespoons shredded fresh mint leaves, or to taste

For burgers:
2 Pounds ground lamb
1/2 Cup crumbled feta cheese
1/2 cup finely chopped pitted Kalamata olives, 12 to 15
6 small pita loaves
2 small vine-ripened tomatoes, sliced
2 small green bell peppers, cut in rings
1 red onion, sliced thin

Step 1:Make yogurt sauce: Mince and mash the garlic with the salt. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes. Transfer to a small bowl and combine with the garlic and mint.
Step 2:Prepare grill and oil rack. Set grill 5-6 inches from coals. In a bowl gently combine the lamb,feta and olives. Form into 6 patties about 1\” thick. Season to taste with salt and pepper. Grill for about 7 minutes per side for medium-rare.
Step 3:Split pitas form a pocket.Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion. Serve burgers with yogurt sauce.

Ingredients to make Feta Cheese Salmon Bake

3 oz Smoked salmon, diced
6 oz Cream cheese, softened
3 oz Feta cheese
1 Egg, slightly beaten
1 t Capers
2 tb Finely chopped parsley
4 Scallions, topped, diced
1 tb (or more) poppyseeds
1 frozen pastry sheet, cut into a 3 X inch rectangle and some melted butter.

Directions to make Feta Cheese Salmon Bake

Step 1:Preheat the oven to 375 degrees. In a medium bowl, hand mix the salmon, cream cheese, Feta cheese, egg, capers, parsley, and scallions.
Step 2:Roll out the pastry sheet to double its size. Liberally brush it with melted butter. Spread the salmon mixture over the sheet. Roll up, jelly-roll style, folding the ends in to seal. Brush the top of the roll with melted butter and sprinkle with poppy seeds.
Step 3:Make 1/2 inch deep diagonal slashes across the roll to allow steam to escape. Bake the roll for 20 to 30 minutes or until golden.

1/2 ts Sweet basil
1/2 ts Dill weed
2 1/2 tb Feta cheese
2 1/2 tb Cucumber,pureed
1/2 ts Fast-Rise yeast *** OR ***
1 ts Active-Dry yeast

SUCCESS HINTS: Cucumber should be peeled, seeded, and then pureed. If the feta cheese is packed in water, drain well. Finely chop the black olives.
