For yogurt sauce:
12 Ounces plain yogurt
2 Small garlic cloves
1/4 Teaspoon salt
3 Tablespoons shredded fresh mint leaves, or to taste

For burgers:
2 Pounds ground lamb
1/2 Cup crumbled feta cheese
1/2 cup finely chopped pitted Kalamata olives, 12 to 15
6 small pita loaves
2 small vine-ripened tomatoes, sliced
2 small green bell peppers, cut in rings
1 red onion, sliced thin

Directions to make Greek-Style Lamb Burgers with Minted Yogurt Sauce

Step 1:Make yogurt sauce: Mince and mash the garlic with the salt. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes. Transfer to a small bowl and combine with the garlic and mint.
Step 2:Prepare grill and oil rack. Set grill 5-6 inches from coals. In a bowl gently combine the lamb,feta and olives. Form into 6 patties about 1\” thick. Season to taste with salt and pepper. Grill for about 7 minutes per side for medium-rare.
Step 3:Split pitas form a pocket.Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion. Serve burgers with yogurt sauce.

Ingredients to make Grandma’s Irish Potatoes

1 1/4 lb Potatoes (3 or 4)
2 tb Butter, melted
1 c Flour, all purpose
1/2 ts Salt
4 ts Vegetable oil

Directions to make Grandma’s Irish Potatoes

Step 1:Peel and halve potatoes; put in large saucepan with enough water to cover. Bring to boil; simmer, covered, 20 to 30 minutes, until fork-tender. Drain well; return to saucepan over low heat. Add butter; mash potatoes well. Stir in flour and salt.
Step 2:Gather mixture into a ball; turn onto lightly floured surface. Knead lightly until smooth. Divide dough in half.
Step 3:Roll out one half into an 8 in. (20 cm) circle, about 1/4 in. thick. Cut into quarters; set aside. Repeat with remaining dough.
Step 4:In large nonstick skillet, heat half the oil over medium-high heat. Cook dough quarters in batches, 2 minutes on each side or until golden brown, adding more oil as necessary. Serve warm.

Step 1:Preheat oven to 350 F.
Step 2:Flatten chicken breast with kitchen mallet between sheets of plastic wrap. Dip chicken cutlets into egg, then into bread crumbs.
Step 3:Place in lightly greased 9 x 13 x 2 inch baking pan, Bake 20 minutes.
Step 4:Remove from oven, pour marinara sauce on chicken breasts, then sprinkle with parmesan and mozzarella cheeses. Return to oven, bake an additional 15 minutes, until cheese is bubbling and golden.
